Edinburgh’s Greyfriars Bobby’s Bar on Candlemaker Row, off George IV Bridge, has undergone some restoration work. The pub, part of Nicholson’s Pubs, a subsidiary of Mitchells & Butlers, is housed
in an 18th Century building and this greatly influenced the work that took place. A spokesperson told DRAM, “A lot of the work was concerned with stabilising the building and bringing the pub back to its best, as you would expect in a building that is two centuries old.” A fair amount of the changes have also taken place in the non-customer facing areas. Says manager Gillian Newman, “The big changes have been behind the scenes, where we’ve installed brand new kitchens, and modernised all the amenities.” Although the historical significance the building holds, together with its fixtures remains. Gillian explains, “The bar frames just about every picture that’s ever been taken of the Greyfriars Bobby statue, so there’s been a real sense of responsibility in the work we’ve done.”
