A NEW company is trying to make its name in the Scottish whisky market, promoting source water as the best way to serve the national drink.
‘Uisge Source’ bottles private source waters close to distilleries in each of the key Scottish whisky regions in Islay, Highland and Speyside.
The thinking from experts is that the addition of source water promotes the complex aromas and flavours of Whisky, with the company saying their product is best to complement malts.
The product is said to be “pure, clear spring waters,” drawn by hand from private sources, like Islay’s Ardilistry Spring, filtered through peat and highly acidic.
St Colman’s Well in the Highlands produces a high mineral water filtered through porous and brittle red sandstone and limestone. And the Cairngorms Well in Speyside produces water low in minerals having been filtered through hard rock such as granite.
The product has received backing from some industry experts, including Bill Lumsden, Master Distiller at Glenmorangie and Stephen Cribb, geologist and author of ‘Whisky on the rocks’.
