Tony Singh will be launching his new pop-up restaurant in Edinburgh’s Metro Brasserie at the Apex International Hotel throughout August this year. His new venture will coincide with the Edinburgh fringe as the lauded chef hopes to bring an eclectic fusion of cuisine to this year’s festival.
