Rusk & Rusk to open The Spanish Butcher in Glasgow

Rusk & Rusk, the team behind Hutchesons and The Butchershop, will bring a taste of Spain and the Mediterranean to Glasgow next month when The Spanish Butcher opens in the Merchant City.

The new 100-cover restaurant and a wine and cocktail bar from restaurateurs James and Louise Rusk will open its doors at 80 Miller Street in mid-November.

Work is currently underway on the 3’600sq ft venue which is being transformed with a New York edge by Glasgow-based architects, Mosaic.

The Spanish and Mediterranean-inspired menu will include quality Galician beef, sourced directly from Northern Spain, Iberico ham and fresh seafood. A wide selection of Spanish wines, beers and cava will also be served.

Co-owner James Rusk, said, “We are well known in Glasgow, and beyond, for working hard to serve up the most flavoursome cuts of Scotch beef to be found. With The Spanish Butcher we are taking this approach further afield, introducing a very different flavour profile with Spanish reared Galician beef.”

The Spanish Butcher is the third addition to Rusk & Rusk’s growing portfolio of stylish and successful Glasgow restaurants, following Hutchesons Bar & Brasserie in the city centre and The Butchershop Bar & Grill in the West End.
