Former Two Fat Ladies chef launches Bilson Eleven in Dennistoun

Nick Rietz, former head chef at Glasgow’s Two Fat Ladies, has launched his own venture in Dennistoun, East Glasgow, called Bilson Eleven.

Nick and his wife Liz have invested £70k to turn a 140-year old Victorian townhouse at 10 Annfield Place into an intimate 20-cover restaurant.

Nick said, “It’s a beautiful building. We’ve stuck to the original features and took inspiration from the Victorian elements we uncovered and put in a new kitchen.”

Bilson Eleven will operate as BYOB until it secures its liquor licence. Nick adds, “It’s a lovely area and people seem excited to have something new and a bit different open.”
