The first city outpost in Gleneagles Hotel’s almost 100-year history, Gleneagles Townhouse, opened its restaurant, The Spence, to the public today (27 June) following its launch to members and hotel residents earlier in June. The ‘modern brasserie’, is headed up by Head Chef Jamie Wright, who returned to his native Scotland to take up the role.
New restaurant consultancy, Paskin & Co. (the name behind venues like Michelin-starred Evelyn’s Table and The Palomar) has collaborated with the Townhouse team to bring the food offering to life in its first ever project outside of London.
Signature dishes, which Jonny describes as “rooted in classics with a modern twist” includes Wild Mushroom Tart with Goats Curd and Hazelnuts, Whole Roasted Turbot with Fennel & Chilli, Sunday lunch of Scottish Sirloin, Yorkshire Pudding and all the trimmings, and Glenturret Scotch Baba with Praline Sauce and Mascarpone for two to share.
The bar in the all-day dining restaurant, led by Bar Manager Stefanie Anderson, serves seasonally rotating, and locally inspired cocktails, local whiskies, beers, spirits, and wine.
