Eden Mill opens new distillery and visitor centre in St Andrews

Image 10-10-2025 at 10.46Eden Mill has officially opened its new distillery and visitor centre on the banks of the Eden Estuary, just outside St Andrews. The development, which sits on the site of the former paper mill, represents a significant expansion for the spirits brand and has created 18 new jobs in the local area.

The new building brings Eden Mill’s gin and whisky production under one roof, powered entirely by renewable energy. As well as housing its distilling operations, the site also includes a visitor centre with bookable tours, retail space, a cocktail bar, and a golf simulator.

Speaking at the opening, Brand Home Manager Euan Kinninmonth said, “The vision was to create a distillery and visitor centre that would celebrate the town’s rich distilling heritage, highlighting St Andrews as a must-visit destination for spirits tourism. I’m delighted to say that this vision is now a reality. It’s a landmark moment- not just for Eden Mill, but for St Andrews as a whole.”

He added, “On a personal level, I will become the fourth generation of my family to work on the site of the old paper mill, which is a real source of pride given I was born and raised in the area.”

The venue offers a range of experiences aimed at both the domestic and international market. These include distillery tours, a ‘Cask Mastery Whisky Experience’ with chauffeur transfers from St Andrews, and a Gin Cocktail Masterclass. A professional golf simulator has been installed as a nod to the town’s golfing heritage, giving guests the chance to play virtual rounds on The Old Course and other international courses.

On the top floor of the building is The Lookout, a 40-seat bar with views across the estuary towards the St Andrews skyline serving a mix of classic and house cocktails, as well as cheese and charcuterie boards sourced from a local deli.

To coincide with the opening, the distillery has released a single cask whisky matured in an Oloroso hogshead, originally filled in 2016. Only 279 bottles have been produced, available exclusively on-site.
