A new independent hospitality venue is set to open in East Kilbride this month. Ruby’s, located on St James Way, will open its doors on 17 December following a full refurbishment of the former Coppertrees restaurant.
The venue is the latest project from operators Struan Barclay and former Scotland international footballer James McArthur, who have invested more than £700,000 into the site. The dog and family friendly space will seat over 100 guests, with an adjoining bar showing live sport as well as a heated outdoor garden.
Ruby’s will offer breakfast, lunch and dinner. Breakfast includes filled rolls and bagels, while the lunch and evening menus feature pasta, fresh salads, Puccia pockets and dishes such as Tuscan slow cooked beef. There’s also a takeaway option aimed at local workers and shoppers. On the drinks side, Ruby’s will serve a selection of draught lager, Guinness, cocktails, non-alcoholic options and barista coffee.
All staff from the previous venue have been retained, with new jobs also created ahead of launch.
Struan said, “James and I are thrilled to confirm our opening date. The response from the East Kilbride community has been fantastic, and we can’t wait to open the doors in December and unveil the new venue. Ruby’s is designed to feel warm and inviting from morning to night, and we’re incredibly proud of what the team has created.”
James added, “Our goal has always been to create a space people genuinely enjoy spending time in, whether that’s for a casual coffee, a midweek meal or a weekend night out. With the opening date now set, we’re looking forward to welcoming everyone and showcasing exactly what Ruby’s is all about.”
