Hilton Edinburgh Carlton opens Herbie More’s Cocktails & Kitchen

Hilton Edinburgh Carlton has opened Herbie More’s Cocktails & Kitchen, a new bar within the hotel following its £20 million extension, reconfiguration and refurbishment.

The 65-cover venue on North Bridge is named after Herbert More, conductor of the Palm Court Orchestra at Patrick Thomson’s department store, which occupied the site between 1905 and 1984.

Designed by Cunningham McLean, the bar serves cocktails, fine and rare malt whiskies and food built around locally sourced Scottish produce. Its drinks list includes Conductor’s Batch Gin, produced at Summerhall Distillery, and guests will also be able to have access to their own lockable whisky cabinet stocked with a whisky selected for them and their friends and family.

The opening forms part of a wider investment in the Edinburgh hotel by Henderson Park and Klarent Hospitality. Works at the property have included the addition of a new breakfast room, executive lounge, two meeting rooms, an extended lobby, fitness suite and 58 bedrooms. A further 28 bedrooms are due to be added on a new rooftop level by the end of the year, which will take the total number of rooms to 297.
