Sticks’n’Sushi targets Glasgow for first Scottish restaurant

Danish restaurant group Sticks’n’Sushi is set to open its first Scottish site in Glasgow this November, taking its total number of restaurants to 31 across Denmark, the UK and Germany. The new opening on George Square will seat 177 and marks the company’s next phase of UK growth, with further sites expected in early 2026.

The interior has been developed by Copenhagen-based OEO Studio and follows the group’s established design approach combining Japanese and Scandinavian influences. The menu focuses on Japanese dishes, with a core selection of sushi, sashimi and yakitori-style grilled skewers, available à la carte or as set menus while the drinks list includes sake, cocktails, Japanese teas and the company’s own-label beer.

The business was founded in Copenhagen in 1994 by brothers Jens and Kim Rahbek and Thor Andersen and now operates 12 restaurants in Denmark, 15 in the UK and three in Berlin.
