Aberdeen-based brewery Fierce Beer is launching a four-week residency at Bonnie & Wild in Edinburgh, bringing with it a full menu of tailored food and beer pairings.

The award-winning craft brewery will take up the city centre slot at the Dookit Bar from next Thursday, showcasing nine of its beers alongside dishes from Bonnie & Wild’s kitchens, including El Perro Negro, Chooks, and Creel Caught.

Richard McLelland, Sales Manager at Fierce Beer said, “We’re really excited by this residency at Bonnie & Wild. It’s a great opportunity for Fierce Beer to show off its range of award-winning beers to a wider audience within Edinburgh city centre. Having it run throughout most of October gave us the brilliant excuse to showcase our brand new Oktoberfest 2025 Festbier, as well as a few other popular beers, including low and alcohol-free alternatives.”

As part of the collaboration, Fierce’s Cicerone-trained team has worked with chefs from across the Bonnie & Wild marketplace to create recommended pairings for each beer. “Working with the various kitchens at Bonnie & Wild in creating a pairing menu, matching our delicious beers with the beautiful food available at Bonnie & Wild, has been a lot of fun,” said McLelland.

Ryan Barrie, Managing Director of Bonnie & Wild, said, “This is another example of the brilliant collaborations we’re passionate about hosting at Bonnie & Wild as we work to champion independent Scottish brands and give them a platform within Edinburgh city centre. Fierce’s craft beer residency at our Dookit Bar is a superb way for this dynamic Scottish brewery to showcase their range of beers, while their pairing menu beautifully complements the diverse food available here within our Scottish Marketplace.”

The Fierce Beer residency will run until the end of October.
