Crofter’s Kitchen secures green light for container restaurant in Scourie

Crofter’s Kitchen, founded by Grant and Heather Mercer, has been granted planning permission to expand its outdoor dining setup with a new container-based restaurant overlooking Scourie Beach on Scotland’s north-west coast, part of the NC500 route.

The approval, granted by Highland Council after almost a year of working together, will allow the team to install a fully equipped shipping container restaurant next to the existing site with an opening planned for summer 2026. The structure will include a professional kitchen, toilet facilities, and heated indoor seating for up to 25 guests.

Known for its farm-to-fork and dock-to-dish ethos, the new development will allow Crofter’s Kitchen to operate throughout the year, extending beyond its current summer season model. The move is set to offer greater job security in the area, allowing the business to retain staff and provide permanent hospitality roles locally.

Head Chef and co-owner Grant Mercer said, “We’re incredibly grateful to Highland Council for working constructively with us throughout the process and for recognising the value this project brings to the local area.

This gives us the opportunity to create a warm, welcoming space for our community beyond the summer months, while continuing to showcase the incredible produce we’re lucky enough to have right on our doorstep.”

The expanded setup will introduce North-West Highland-style Sunday roasts, an autumn menu, chef-led partnerships with local distilleries, and community-led events such as yoga and brunch gatherings.
