Australian-born Mexican quick-service brand Zambrero has made its Scottish debut with the opening of a restaurant on Byres Road in Glasgow’s West End.
Zambrero said the venue at 333 Byres Road is its largest restaurant in the UK, with seating for more than 40 covers. The company said the opening has created around 15 full and part-time jobs.
The launch builds on the brand’s earlier move into the city with a delivery kitchen near Scotland Street, which opened in September 2025. Zambrero said the response to the delivery operation helped set the pace for a full restaurant opening in the West End.
The new restaurant is being run by franchise partner Dan Hawley, an experienced Zambrero operator who previously ran four sites in Australia before relocating with his family to lead the Scottish launch.
“It’s the flavour-packed menu, combined with our Plate 4 Plate mission, which makes Zambrero stand out,” said Hawley.
Zambrero’s offer centres on burritos and bowls, alongside tacos, nachos and quesadillas, with slow-cooked meat fillings and vegetarian and vegan options. The brand’s Plate 4 Plate initiative links burrito and bowl purchases to meal donations through its charity partner Rise Against Hunger, which Zambrero positions as a core part of its ‘Feel Good Mex’ message.
Founded in Canberra in 2005, Zambrero has grown to more than 350 restaurants globally. In the UK, the group has expanded since its 2021 launch in London and has previously said it is targeting 100 UK restaurants by 2030 through its franchise programme.
