Kochchi Glasgow appoints Shenal Suwaris as Executive Chef

Kochchi Glasgow has appointed Shenal Suwaris as Executive Chef, two months after opening in the city.

Suwaris joins the Sri Lankan restaurant following his departure from Sushi Samba Edinburgh, where he was Head Chef.

His appointment sees him join Kochchi founders Suki Jayaratne and Shehan Fernando, who are close friends of the chef, as the business looks to build on its launch in Glasgow and develop its presence in Edinburgh.

Originally from Sri Lanka, Suwaris’ cooking is based on the food and spice traditions of the island, with a focus on regional dishes and street food and, from next month, he will introduce a Sri Lanka Tasting Menu at Kochchi Glasgow.

Shenal Suwaris said, “Joining Kochchi at this stage feels incredibly special. We’ve shared a vision of showcasing true Sri Lankan flavours in a modern and exciting way. It is an honour to step into the kitchen just two months after launch and help shape its future.”

Suki and Shehan said, “Bringing Shenal on board was always part of the bigger dream. His passion, skill and deep understanding of Sri Lankan flavours make him the perfect person to lead our kitchen. The launch of the Sri Lanka Tasting Menu in May 2026 will be a huge moment for us and for Glasgow’s dining scene.”

As part of the role, Suwaris will oversee the kitchen at Kochchi Glasgow and the Kochchi site within Bonnie & Wild in Edinburgh. He will work with both teams on menu development, training and kitchen operations.
