Stac Poly opens new ‘secret gin garden’

Mark Galloway has opened a new ‘secret gin garden’ outside his Stac Poly restaurant on Edinburgh’s Dublin Street which seats about 20 customers in its basement level and on tables and in two outdoor ‘islands’ upstairs, accommodating four people each.

Wooden decking has been revamped at the basement level and tables topped with gin bottle vases are spaced out in line with social distancing guidelines, with flowers draped from the stone walls.

He also plans to open the upstairs area, previously a gin and wine bar, as a brasserie.
