Ahead of the opening of their new Irish-themed bar, The Boston Bar, and following the success of their country-themed nights at Freddy’s, Encore Bars are launching Westside Rodeo this weekend – a country-themed pop-up bar on George Street with the entire venue dedicated to the “charm and excitement of country music”.
Promising to bring Nashville to the heart of Edinburgh, guests can look forward to live performances from some of the best country artists, with country-themed cocktails and a selection of premium beers and tequilas, all with a distinctive Westside twist.
“Westside Rodeo is more than just a bar – it’s an experience,” said area manager Gavin Currie. “Whether you’re a seasoned country fan or someone who’s new to the genre, there’s something for everyone. With performances scheduled throughout the week, each visit promises to be unique, filled with music, dancing, and good times.”
Previously owned and operated by the Montpeliers group, the Freddy’s team have given the venue a makeover with a saloon-style interior including rustic wooden furnishings, wagon wheels and life-size horse statues.

Westside Rodeo, will be open Thursday to Sunday and is currently recruiting for supervisors, bartenders, waiting staff, and barbacks at all three of their venues.
