Skyline Sips is back for its third summer season at Level 5, St James Quarter – bringing rooftop views across Calton Hill and Leith.
Positioned between Everyman Cinema and Roomzzz Aparthotels, this year the pop-up bar sees the team join forces with Smirnoff to spotlight the brand’s Miami Peach vodka with its Pink Flamingo cocktail, “It’s our way of bringing a taste of Miami to Edinburgh,” said Sips Managing Director Micheal Donovan.
The seasonal venue has also partnered with St James Quarter’s Salerno for wood-fired Neapolitan pizzas, and Gordon Ramsay’s Street Burger to serve burgers and wings.
Michael said, “Our first Skyline Sips at St James Quarter launched in 2022 and we’re genuinely pleased to return for a third time. It’s an ideal rooftop setting in one of Edinburgh’s most iconic locations.”
He added, “We’ve created a friendly, chilled-out bar offering quality food, a wide range of drinks and one of the best views in the city. It’s designed to be an oasis of calm – whether you’re winding down after work or enjoying a night out with friends.”
Established in 2016, Sips is an Edinburgh-based pop-up bar business with experience across major events including the Royal Highland Show, Fly Festival, Musselburgh Racecourse and the Edinburgh International Festival.
Skyline Sips will open Fridays to Sundays (12pm–11pm) until 13 June, before extending to seven days a week through until 31 August.
