Chef Modou Diagne is set to open his second Glasgow restaurant in July, called TRUST by Modou. Based in Finnieston, the new venture follows on from the success of 111 by Modou in Cleveden Road, formerly 111 by Nico, which he took over in 2020 from Chef Nico Simeone.
The new restaurant will not operate with a traditional menu. Instead, guests will be offered a five-course tasting experience, created entirely by Modou and his team. The dishes will change regularly and highlight “seasonal produce, bold flavours and storytelling through food”.
Chef Modou Diagne said, “This is the restaurant I’ve always dreamed of. TRUST is about more than just great food — it’s about connection, surprise, and giving people a reason to come back not just for a dish, but for a feeling. I want people to walk through the door, let go of control, and simply enjoy what we’ve cooked and prepared for them in that moment.”
Located in Glasgow’s West End, the team describe the new space as warm and pared-back, designed to focus attention on the food and overall experience.
Modou started as a kitchen porter and worked his way up to head chef at 111 by Nico. Originally from Senegal, he arrived in Glasgow aged 19 with £200 in his pocket before meeting his mentor, Chef Nico Simeone, who gave him his start in hospitality and later the opportunity to take over the restaurant and rebrand it under his own name.
