The Boston Spud Co. which puts a new twist on the classic baked potato, opened in Edinburgh this week at the Boston Bar. As the name suggests, the menu is all about potatoes with “big, fluffy, buttery spuds loaded with a mix of comforting, character-filled toppings.”
The Boston Spud Co. menu will be a permanent addition to The Boston Bar’s offering as it gets ready to open a new space, Downtown Boston, at the beginning of August.
Owner Edward Fox said, “We’re really excited to launch Boston Spud Co. as a new chapter for The Boston Bar. We wanted to create something that felt fun, filling and full of flavour – something that gives people a reason to look forward to lunch again.
“The baked potato is such a classic, but we’ve given it a Boston twist with bold toppings and great value. Whether you’re grabbing a quick bite on your break or sitting in with a pint, we think it’s going to hit the spot.”
