Mollie’s to open first Scottish site at Edinburgh Park

Mollie’s Motel & Diner has submitted a detailed planning application to bring its diner-meets-hotel concept to Edinburgh Park, in partnership with developers Parabola. The proposal outlines a 207-bedroom property, which would mark the brand’s first Scottish site and fourth in the UK.

If approved, the development will include guest bedrooms, a lobby, reception and lounge, a signature diner and bar with an outdoor terrace, along with car parking and electric vehicle charging points.

Design and planning work has been led by 3D Reid Architects, Lichfields Planning Consultants and Amicus Property Consultants. The application follows a period of public consultation.

Located next to Edinburgh Park’s tram stop and rail links, and close to the planned 8,500-seat AEG entertainment arena, the site has been positioned to capture both commuter and leisure demand year-round.

According to the submission, the development is expected to create 455 full-time equivalent jobs during construction, with around 69 permanent roles once operational.

Tony Hordon, Managing Director of Parabola, added that the new hotel would support Edinburgh Park’s evolution as a place to live, work and visit, and that Mollie’s “will positively support the area’s ongoing development and progress.”

Founded in 2019, Mollie’s is inspired by the classic American roadside motel and diner. The brand is a certified B-Corp and continues to expand its national footprint.

In a previous statement, Matt Bell described Edinburgh Park as “the perfect location” for the group’s next opening, “As a new urban quarter that will not only become an exciting place to live and work but also a cultural destination and creative campus for Edinburgh, serviced by exceptional transport links, we’re truly delighted to work with Parabola to achieve this.”

Mollie’s joins a growing number of brands investing in Edinburgh Park as the district develops into a vibrant hub for residents, commuters and visitors.
