London steak group Flat Iron has announced it will open its first Scottish site on Glasgow’s West George Street in 2027, taking over the former Yo! Sushi unit.
The 120-cover restaurant will occupy two floors of a four-storey Renaissance building, with interiors inspired by the building and the Glasgow School of Art.
Flat Iron was founded in 2012 by Charlie Carroll, who trained as a butcher before building the concept around lesser-known, more affordable cuts – particularly the flat iron, taken from the featherblade. The group now has 18 restaurants, 15 in London, with further sites in Manchester, Leeds and Cambridge.
Glasgow will be its most northerly opening, following recent expansions into Bristol, Brighton and Newcastle, and a planned Liverpool launch this summer.
The menu will lead with the namesake flat iron steak, with blackboard specials including daily Wagyu and a burger made from the group’s own herd in Thirsk, Yorkshire. Sides will include beef-dripping chips, crispy bone marrow mash, creamed spinach and truffled macaroni cheese, with wines, draught beers and cocktails also available.
