The Spanish Butcher expanding to the capital

Glasgows The Spanish Butcher, which also owns The Butchershop Bar and Grill in the city, is expanding to Edinburgh in the spring of next year, with the opening of The Spanish Butcher in North Castle Street.

RUSK & RUSK, the Group behind the venture, has been widely credited in redefining the steak house concept in Scotland for almost fifteen years across its restaurants. Now, with the arrival of The Spanish Butcher in Edinburgh, east will meet west for RUSK & RUSK as the group expands into the city with the 90-cover restaurant.

34D32B51-3C70-4BFA-8DDF-2C05CAEF9187Promising vibrant Spanish and Mediterranean-inspired flavours across an à la carte menu, married with the very best homegrown produce from Scotland’s larder, diners can expect the most delicious and unique cuts of steak and the freshest seafood ingredients on the menu, plus of course The Spanish Butcher’s legendary appetisers.

Along with appetisers including, Hake Ceviche and Cumbrae Oysters, the menu includes whole Shetland monkfish and Galacian fillet burgers.

Founded by James and Louise Rusk, Louise previously described their approach telling The Dram, “For us, a restaurant is about more than just the food; it’s about the whole experience, the theatre of the moment with the setting playing a crucial part in that.

“Combining our focus on food, service and design we love to create lifestyle dining environments that are dynamic yet relaxed, spaces we to love to dine in.”
