The Three Chimneys at Talisker – a joint venture between one of Scotland’s best-known destination restaurants and Skye’s oldest distillery – has been added to the Michelin Guide for Great Britain and Ireland, less than two years after opening.
The dining space, which launched in spring 2024, is located on the Talisker Distillery site at Loch Harport. It is run by The Three Chimneys team under head chef Paul Green, whose menus draw on local seafood and meats, as well as Talisker’s whisky profile.
The Michelin Guide describes the restaurant as having “an enviable location” with “plenty of seafood on the menu” and references its use of Talisker whisky in dishes such as oysters. The ‘Michelin Recommended’ status is awarded to restaurants considered good by Michelin’s inspection team, though it sits below the star and Bib Gourmand classifications.
Paul Green head chef of The Three Chimneys, said, “Earning our place in the Michelin Guide just two years later is a huge achievement and is testament to the continued dedication and passion of our team, as well as support from all our local suppliers.”
He added, “The ethos of both The Three Chimneys and Talisker are rooted in local produce and the communities that make the Isle of Skye. With this in mind, The Three Chimneys at Talisker will continue to celebrate the best of Skye, Land and Sea.”
Talisker Brand Home Manager Leigh Aitken said the partnership had enhanced the visitor experience at the distillery. “The restaurant and distillery are both an embodiment of what makes Skye, Skye,” she said. “This achievement is recognition of the exquisite quality and careful craftsmanship that makes a visit for foodies, whisky fans and people who love to sample the best of a place, simply unmissable.”
The Michelin Guide inspectors said, “This restaurant on the western side of the island has an enviable location in more ways than one. Firstly, it’s on the edge of Loch Harport and comes with glorious views, and secondly, it’s right by the Talisker distillery – making a pre- or post-lunch tour a must for whisky enthusiasts.
The Three Chimneys at Talisker will run a series of culinary events in 2026, including live music, whisky-paired menus and a seasonal Distillers Table programme. The initiative forms part of Diageo’s broader visitor experience strategy, which has included major investment across its Scotch whisky sites since 2019.
