Six by Nico on Byres Road to become Lennox as Simeone takes new direction

Nico Simeone is closing his Six by Nico restaurant on Byres Road in Glasgow and replacing it with Lennox, a new restaurant and bar launching in late May 2026.

The Byres Road site will be the second Lennox to open, following the Manchester debut in March. Simeone has spoken of wanting to step away from the fixed tasting menu format he is known for and open what he describes as “the other side of the coin” to his established portfolio.

Six by Nico made its name on themed six-course menus with a strong narrative element. Lennox drops that framework entirely, with Simeone describing the new concept as a return to a more instinctive, personal style of cooking. The menu will lean on fire-led techniques, with a Japanese barbecue at its core and dry-age fridges for steak and fish. Simeone has pointed to the New York City restaurant scene as an influence, and the venue will have a fully open kitchen.

Nico Simeone said, “I am both excited and nervous to introduce Lennox to the Glasgow community. While Six by Nico on Byres Road has been one of our most successful sites, I’ve felt a growing pull to strip things back and reveal a more personal side of my cooking. It may be seen as a risk, but I truly believe in Lennox and in the food we’re creating. Bringing this concept home to Glasgow, where my journey began, makes it all the more meaningful.”

The Byres Road opening coincides with Six by Nico approaching its tenth anniversary. The full opening date and debut menu for Lennox Glasgow will be confirmed in the coming weeks.

The Six by Nico restaurant in Merchant City will continue to operate. Simeone has also confirmed plans to bring Lennox to Edinburgh, though no date has been set.
